I feel I should clarify that dubliner, while fantastic,
tastes a bit different from cheddar, but is wonderful on
anything you'd put cheddar on. As far as the
consistency/texture, I don't recall dubliner being of the
"crystally" variety, but 2-year(or older) cheddar and aged
Gruyère definitely are, in my experience. Kerrygold also
makes a wonderful swiss that is nutty and savory, and an
actual (aged) cheddar if that's what you're after.
This is what's available where I live, but they
seem to have different products listed for each country's
website so I'm not sure what will be available in your area.

Well, asiago stagionato sounds pretty darn good, from
what I
have read. But it seems too expensive to be classed as an
everyday cheese.


consider that here in italy its local food so its less
expensive than one of those plastic cheeses that you see on
tv, same goes for the provolone, glasse had a sandwich for 9
quids but here its the food of the workers

it's a pretty mild pepper jack, presliced from the local
