japanese kid's breakfast favorite:

1-2 tbsp veggi oil
2 cups over-night rice (rice made night before and kept in
refrigerator)
3 large eggs
salt
soy sauce

scramble up the eggs with a bit of oil. before eggs turn dry
add rest of oil and the rice. fry together. salt and soy to
taste.

eat it. kids love it.
