making your own spice paste is the best part! its really
therapeutic spending 20 minutes over a mortar and pestle.

this one's tried and tested. not too many spices involved,
still tastes fantastic.

lamb rogan josh


diced lamb shoulder/roast 400g
brown onion chopped
natural yoghurt

vegetable oil + butter 1/3 cup

cinnamon stick 1
cardamom pods 12
cloves 12
turmeric 1 tablespoon

garlic grated 4 cloves
ginger grated 2-3 inch
chilli chopped to taste
coriander chopped 1/3 cup


combine lamb + yogurt, add salt. leave for 10 minutes

heat oil+butter in a pan, add cloves, cinnamon, cardamon.
cook until fragrant

cook chopped onions in the spices

add ginger and garlic, cook for 30 seconds.

add lamb+yoghurt, chopped chilli, and turmeric.

cover the pan, cook over low heat for 1 hour, stirring
occasionally

stir in chopped coriander, salt and pepper to taste, serve

the secret ingredient is time. what happens in that hour of
braising in the rogan josh recipe is magic. most curries are
straightforward recipes, its all about the flavour
interchange.

Rockenjohnny is right, making your own paste is the best
(not to mention the hardest) part and integral to Indian
cooking. I love curries and can make all sorts (I'm learning
to do Thai ones at the moment).

As it happens I'm off out for a curry and a couple of
bottles of tiger beer in 10 minutes time.

What a coincidence..I cooked curry for dinner tonight.

My recipe is rather modest. I use the cheap packaged curry
brick, but the only other ingredients I used tonight were
butter (for stir fry), chicken, potato, onion, and carrots,
with rice cooked separately. Simple but satisfying.

Ha ha! A mate asked me the same question this weekend and my
brother (who does a massive amount of things) is constantly
surprised by it.

I tend to learn most things quite quickly and have a good
memory for things that interest me (although conversly, if I
have no interest in something, I cannot remember it, no
matter how hard I try). I also don't have much interest in
watching sports or TV in general. I'm not one of those
people who put the TV on by default of an evening, this
alone frees up about a dozen hours a week. These days I
don't go on the lash very often (couple of times a month,
max), so not only don't spend the evening down the pub, but
I'm also not hung over and ineffective the next day.

I read (lots of it non-fiction) a lot too, which is good for
acquiring knowledge/skills quickly. Just now I was reading a
book on making survival kits while I had a bath, back on the
subject of curries, I had a book on them to hand while I was
on hold to the gas board the other week and was reading that
and learning a new recipe while. I also work at home a lot
of the time, which means I can do my housework/chores during
lunch hour, so they don't eat into my evenings/weekends.
Also means that whilst I ride/drive a lot for work, it's
offset by not commuting each day. I also use a bike over a
car wherever possible, which saves a few hours a weeks, the
amount I drive.

This weekend, saturday: I got my hair cut, did a bit of my
dissertation, went over the finance arrangement a mate was
taking out on his car to make sure he wasn't going to be out
of pocket, made a load of canapes for a party, took a mate
who was learning to drive out to practice manouevres, party
in the evening, after everyone else had gone home/to bed I
started about half a dozen tracks. Sunday, watched a film,
helped a mate fix the front brake on his bike, out for a
ride with my advanced riding group all afternoon, in the
evening, went over a job application for my gf and made some
suggestions/changes, then out for a curry.

Yeah, goes really well with curries. As it happened, my
nearest curry house was out of action (being refurbished) so
I had to go across town to the Shahi Noor. This turned out
to be quite fortuitous as they gave us about 1/3 off the
price and free drinks. On the down side, they didn't have
Tiger beer, so I ended up having Cobra instead.

Mortsto weekend (visiting a friend), saturday: Woke up with
a hangover, went downtown for a ciabatta breakfast. Tried to
find a new sweater, but wasn't motivated to try anything on,
so I failed. Went to see a football match, and have a couple
a pints. Ordered a pizza, lotsa more beer, went to a
shithole called Spasibar and almost got in a fight because
of a silly friend, more beer, kebab, taxi home, more beer
and facebook nachspiel, passed out.
Sunday: Hangover, surfed the net while watching my friend
play guitar hero and fifa. Some mexican food for breakfast
at four, almost missed my plain home, wnt to sleep.

He he, your weekend sounds very similar to my weekends when
I lived in a house full of lads. :)

I forgot to mention I also watered all my plants (and the
ones at my parents' house) and tended to my Bonsai on the
saturday.

There's a new one on Holton road that has sprung up since
you've been away. It's pretty good- I think it's almost as
good as the Shahi Noor (which is the one on high street)
used to be.

That's the Paramount. This one is further up town but I
don't know the name.

Some idiot he was with got into a confrontation and hurled
an ashtray at the waiter. My cousin got caught up in it. I
can't really blame the staff as they must get so much shit

from what ive read, lamb dupiaza basically follows the same
recipe as the rogan josh i wrote down

make sure you use plenty of onion

at the stage when you bring together the onion base, lamb
and yoghurt, substitute the turmeric for these spices

ground coriander 1 teaspoon
ground cumin 2 teaspoons


at the final step, when the fresh coriander is added, also
stir in 1 teaspoon of garam masala
