Like potatoes and carrots. I cook up a stew and let it
simmer four or five hours and sometimes the taters and
carrots are still hard. What gives?

Also why is it that when I have high intensity workouts I'm
more incontinent? Doesn't my body want more food energy?

steaming helps alot, the only good thing microwaves are good
for in my opinion

Steaming them before putting them in the stew?

No

I thought that maybe I was blanching the vegetables by
adding cold cans of tomatoes. So next stew I put in the
tomatoes first and simmered for awhile, then added potatoes
and carrots.... Still crunchy'ish

I like to boil my sliced carrots up for a short while and
then fry them, not too much heat with butter. (you can add a
tiny amount of olive oil if your pan is too hot to avoid the
butter going bad and becoming dangerous for consumption) The
thing I enjoy is adding a tiny amount of sugar as you cook
them in the pan as it really sweetens the vegetable. You can
even divide it into three cooking parts and finish by
roasting them in the oven for that soft texture.
