 | If I'm transferring S/PDIF signals through a coax cable, ~2m long and 75 ohm impedance, will shielding matter much? I
mean, noise can't be noise in the same way to a signal that
isn't interpreted as sound until it reaches the end, right?
I mean, less shielding could cause corrupted data to be
sent, but unless that happens, the sound quality should be
the same with a heavily shielded cable and a normal cable,
 right?

 | I'm sorry, but you didn't minimal techno, so I can't help! However...
If you those SPDIF signals were transmitting minimal techno,
then I would say the following:

More shielding is better in every case. There are probably
comprimises to be made with size, cost, etc, but get the
best cables you can in any instance.

Although you correctly assume noise on a digital signal will
be different to noise on an analogue signal, it will still
 cause problems.
Noise on a digital signal can cause bits to "flip" or change
 state from a logical 1 to 0.
The effect of this is to corrupt the data. The amount of
corruption may be small and may not be perceived by the
listener, or it may be more and noticable. There is no clear
distinction between crystal clear and corrupted, but more of
 a continuum, like analogue.

The thing with digital is, it depends which bit is affected
 by the noise...
Since S/PDIF is 20 bits resolution, if the MSB (most
significant bit) is "flipped", the amplitude error for that
sample would be 50%, but if it was the LSB (least
significant bit), it would be tiny! (0.000095%)
It also depends on how many samples are corrupted per second
and the dynamics of the music as to whether data corruption
 is audible.

I would suggest getting the best cable you can, or for short
lengths like 2m using TOSLINK fibre optic cables if your
equipment supports it. (light is immune to electrical
 problems)
But perhaps before doing all that, if you already have
access to a cheapo cable, try it and see if it's any good.
Use your ears to test it.

 | Yeah, I thought about optical, but a 2m optical cable is awesomely much more expensive (and prone to breakage) than a
2m coax. Thing is, I got this cable that basically works,
and it works better than the old 2m analogue monster cable I
had (clearer sound, especially in the highs, and the bass is
slightly louder and tighter). It cost, like, 69 kroner (very
little), and the 2m monster cable (and equivalent
consumer-grade cables) costs something like 550 kroner. This
is just for my own music-making hobby ("minimal techno"),
and mp3s ("minimal techno"), so audio quality doesn't have
to be super great, but I was in the store, and I figured
maybe I should try it, since the sound card (e-mu 1820) has
both coax and optical. I got it working, and immediately
noticed the difference, but as I always do, I start thinking
"Ha. Maybe it can get better?!" I started doing the rounds,
checking the internal D/A thingie of the e-mu vs the one in
the receiver (Yamaha RX-V440), and while the E-mu's could be
said to be better, I only work in 48khz/24bit anyway (due to
power-consumption, ins and outs start getting disabled if I
use higher hz, but it goes up to 192 or something), so the
Yamaha's 96khz were more than enough (the signals don't have
to match, right? 96khz would be the roof, not the absolute
value?). I then caught myself doing all the worrying, and
decided I'd just let it be, but as I saw you online, I
 figured I could ask.

I'll settle with that it sounds better than it used to, and
that I probably should upgrade my stereo again soon, as it's
getting old. Thanks for the info!
