sort of garage style UK hiphop, with simple bassy music and really pissed-off sounding london MCs

Exactly! It's getting to the point now where they'll probably come up with different genre names for songs with different melodies.

we should make up a different genre name for each individual artist. then theres no way you can get confused

It's true Grime generally has lyrics, whereas dubstep generally doesn't. I wouldn't say (although a lot would disagree with me) however, that that is the only distinction. I think Dubstep has more of a fixation with sub sounds and generally more sparse drum patterns and a slower sound overall (although the tempo is the same, it sounds more plodding). I think there are a few "dubstep" artists/tracks that are nearer to grime in sound (even though they don't have vocals). For example I think a lot of MRK1's instrumental tracks are quite Grimey in composition, as are Iron Soul's (although his Kromestar alias stuff is more dubstep).
As somejerk says, I think Grime has some elements of crunk in it (machine gun hi hats and claps in some tracks, plus the drum sounds themselves are quite crunky). I'd say most dubstep lacks this (not that that's a bad thing).
