My grandma taught my brother the secret to make splendid
nougat. If you'll be still interested tomorrow, bump this
thread and I'll ask him about it. I know that the recipe
included butter, milk-powder, sugar, cocoa and something
more. Generally ueber-unhealthy.

but maybe you're confusing with nougatine? (or maybe it's
called nougat just like white nougat in english...)

anyway,
i don't know a lot of kinds of cookies but i like them very
much. : )

where i live "cookies" are only the round, flat, crispy kind
of biscuits, like chocolate chip cookies and its
alternatives (full chocolate, chocolate & coconut maybe,
etc)...

I just patented the same thing only with chunks instead of
bits. We'll just see what the customers think. It's not who
has the best cookies anyway but who has the best marketing

OK, here's the recipe for nougat by my grandmother:

Ingredients:
1. 250g of butter (true butter made of fat or good
margarine)
2. 250ml of sugar
3. One little bag of vanilla sugar or vanilla aroma
4. A little undefined amount of water
5. Three full table spoons of baking cocoa, you know that
hardly water-soluble one, used for baking.
6. 500ml+ of powdered milk (not granulated)

You put a pot on a slow fire and mix first 5 ingredients
with a wooden spoon (with Viking runes preferably) until you
get a homogeneous slightly boiling pulp.

When the pulp cools down, you need to mix powdered milk in.
I prefer adding more powdered milk, so the nougat is solid,
not liquid, but taking into account the difference between
food products in out countries, you'll have to do some
proportion adjusting anyway.

Tou can add some crushed biscuits and put the nougat between
two large wafers, that's the classic QRDL's family way.

beaten egg white, sugar, honey, roasted almonds (but you can
also find other types of roasted nuts sometimes, like
pistachios), sometimes vanilla, and sometimes chopped
candied fruits. it can be chewy or hard (i prefer it
chewy).

there is also a special kind of nougat called "nougat noir"
(black nougat), that is quite very different, without egg
white, much harder and like hard caramel; but that can
mainly be find in provence (southern france).
