i have some tracks to record, but nothing is software based. i have hardware, which is run into a mixer and i have all the cables necessary. looks like i'll be using an RCA for the mixer output and it goes into an 1/8" input for plugging into the soundcard. first off, i'm assuming this is the best way to record off an external source? or should i be using the Line Out and an adaptor cable to hook it up to the computer. i'm going to be recording everything through the mixer, not off of individual pieces of gear, so whatever i have has to handle all the noise coming in, i'm not going to multritrack record anything just yet. also, i need some recommendations for software. i have a demo of cool edit pro and it seems nice, but i'm wondering if there is a program out there that would be better for what i'm doing or is just better in general.

i use mixer>rca>1/8 just like you describe for the same purposes. it works great for me.
cooledit pro is under-rated in my opinion. i find it's worked extremely well. i've done countless recordings with it. it's easy to understand and has a great interface. i recommend that.
