For my vinyl -> PC setup, I am after really good preamp.
The only thing I require is gain control; nothing else. I
want something where I can guarantee no introduction of
extra noise noise or level-altering to the signal.

Any suggestions?

my player has a preamp built in, and has a switch under the
slipmat so i can switch it on and off

(non-package solutions are always best, by the way.. two
separate units, each dedicated to their own thing perform
better than one single unit doing it all. if you are
recording, keep EVERYTHING in separate units!)

a cheap dj mixer for like £40 and use that, then you get 2
and probably a mic input to play with too. they should all
have unbalanced phono outs, but not balanced outs, however
unless your soundcard is a bit upmarket then it will have
unbal inputs anyway.
The quality of even dirt cheap dj mixers is great, generally
the dont generate any extra noise, infact most of the noise
comes from the deck itself, i.e. mechanical noise from the
motor, etc.
If you want less noise, then use a balanced output from
preamp to balanced input to soundcard on sheilded xlr
cables, or dont bother, the difference is very minimal. also
cross audio cables and mains cables at 90 degress so you get
zero pickup.
