..how do I load up a sample to be played every time I press
a key on my midi controller.. or how do I assign samples to
individual keys on my midi controller

Use Kontakt or any other software sampler VST.

ecnadniarb is correct. the function you're describing is
the job of a sampler not a sequencer. Kontakt will work as
will Battery. Halion is Steinberg's Sampler. Basically, If
it's a VSTI it will work well in Cubase regardless of
platform.
