focaccia for mos beans: 975g bread flour (high gluten) 680g water (filtered if possible) 27g Fresh Yeast (or 9g instant yeast or 13g active dry) (if you use active dry make sure you 'prove' the yeast with 38-43C water for 10 minutes until it blooms) 25g salt 10g extra virgin olive oil throw the shit in a mixer for 10-15 min, starting on low and ending on medium put in an oiled bowl and cover for 45 minutes after 45 min, fold it in on itself 3 times and flip. cover for another 30 min preheat the oven to 230C oil a sheet pan (cookie tray?) and lay the dough out. cover again for 30 min. after 30 min 'dock' by getting those wiggly digits in the dough. press firmly to make dimples and spread dough to edges of pan. drizzle with extra virgin olive oil, salt, and black pepper bake for ~30min?? look at it, turn it every 10 or so focaccia for mos beans |
