The better my mood, the better my cooking, and the better
the taste. Which in turn makes me happy.

Cooking Mexican style for Mrs Spinkles tonight. I hired a
Jeovah's Witness (the drummer is a scientologist) band to
play la Cucaracha in 7 different styles.

I hoped for dancing cockroaches but I can't find or buy any.

I get premade samosas and tabbouleh from an Iranian (?)
grocery near me, and make sauce with balkan style yogurt
from the same place (add mint, lemon, etc). They have food
from various countries. Its the only place I've found fresh
turmeric.

Hummus is usually either too bland or too sour. I've tried
making my own by blending chick peas and stuff and it was
OK. I think it as missing the tahini.

I've stepped up my game since I learned about adding
cinnamon and allspice as well as cumin. Works really well,
along with diced onion, in ground beef or lamb meatballs.

Oh and throw some za'atar in the yogurt sauce, you can dip
anything in it and it will taste great.

doing it good, and that good is the mood.

yeah I'm more of a cocoa in the coffee guy myself. If you
don't care for cinammon, mix some allspice in with the
cumin, you can take that in a jerk spice direction. Try
this one and leave out the cinammon, though it kind of
disappears in with the other spices anyways. I put extra
cumin and a splash of vinegar in there.

here it says that allspice too is used in
palestinian cuisine, i'll check if they have both jerk and
allspice in my supermarket and report back. But first i
wanna try ground beef with onion and cumin as the
ingredients seem to be less obscure to find.

I use balsamic vinegar for my vinegar needs, i put it in all
the vegetables i eat basically.

Allspice, red pepper flakes, canola oil i have to check if
they have them, not sure. Maybe ill change the canola oil
with extra virgin olive oil if they have all the spices. One
question, the recipe lists all the spices, but where's the
jerk?

sure the food is a match.

they had cumin at the mall but it was in small leaves, not
in powder, so i didnt buy. they had also dried onion on the
spices shelf, i was tempted to buy it since i wouldnt know
how to cook a fresh one into the ground meat but i didnt buy
that either.

I made a vegetable gratin yesterday. Potatoes, sweet
potatoes, Swiss char, fenil, brocoli, and cauliflower. Two
small whole onions in as well. Cooked in bouillon before
grilled in the oven in bechamel sauce with grated cheese on
top. The only downer is for it to really work you need to
respect that each vegetable needs a different time to cook
when you boil or steam them first. It was tasty but I fucked
up and made far too much. I realized this morning I forgot
the dish in the oven (not on) and forgot to store the rest
in the fridge in tupperwares like I usually do. Waste.

i put some pepperoni and some 3-band cheese in a
tomato-onion wrap and ate it, took five minutes. there are
flecks of stray cheese about the plate, though. waste
