Sometimes I like my food a little risque. Downtown style.
When I do, I usually reach for a bottle of Sriracha Sauce
Huy Fong Brand, the one with the rooster on it. It's got
the flavors my taste buds crave: chile peppers, vinegar,
garlic, sugar, and salt. It taste so good to me, mmmmmm.

Tapatio used to be the hot sauce for me. It was cheap and
didn't have the overpowering vinegar taste like many brands.
Don't get me wrong, Tabasco still has it's place on the
family table, but only at breakfast time, Ma! On hash
browns Tabasco it can't be beat. At the grocery store, they
sell a frozen bean & cheese burrito that taste alright to
me. When I'm on the run, I'll grab bag of those, some green
onions, and a bottle of Tapatio hot sauce. The register
lady knows the drill. But don't you forget, register lady,
Sriracha is my brand now!

There's a little pho noodle shop behind the bus stop on
Carligan Way. On cold and rainy days the blinking OPEN sign
becomes a beacon for grumbly stomachs. The letters are pink
and have a blue circle around them. If you peel back the
screen door you'll find six tables, a woman wearing an apron
and a smile, and NO SRIRACHA SAUCE BOTTLES. GASP! But
don't worry, if you ask kindly, Josie will get you one from
the fridge. You see, she makes it herself fresh in a stone
mortar every week. No preservatives, authentic style. On
the bottle there's a picture of a rooster. I remembered
that. That's how I got hooked!

In Thailand, the birthplace of Sriracha sauce, they never
squirt Sriracha on noodles or soups. Strictly a dipping
sauce, they say. I wonder if they realize how much they are
missing out. :0(

Sriracha for the win! I love this stuff. A friend of mine
visitied Thailand for about 6 months, and when he came back
he turned me on to the crimson ecstacy that is Sriracha.
