Right, I don't really need to use it that often, so sorry for being dense.
How do I do that effect where you trace over, say, a photo, then erase the actual photo leaving only the lines I drew?

create a new layer using the pen tool draw on that delete the underlying layer - leaving the outline you drew

Nope, doesn't work, creates a whole new file that has nothing to do with the original image.

I've created the new layer, but it won't let me detach it from the original.
Sorry for being a moron, but this program is pissing me off.

Your new layer should be above the photograph you want to trace. After you trace it, either click the eye next to the layer with the photograph on it (this makes that layer invisible), or just drag that photograph layer to the little trash can icon (this deletes that layer).

At the menu bar at top: Layer > New > Layer...
Make sure color is none, you may change the opacity however you like, 100 will be solid. Mode: 'Normal'. Click 'Ok'.
Now draw wherever you want.
When you're done, in the layer toolbar, right click on the original background layer and select 'Delete'.

Oh, if it is showing up white, make sure when you create a new layer color is 'None'
