I remember when me and my mate Al found a copy of Phaedra in his spare room, we were 14 and were totally baffled as to how an ambient record had come out in 1974.

I'm not even kidding. It was like we thought all music from the 70's sounded like Slade or something.

Oh yes...Tangerine Dream... The first album I heard was Ricochet. My teacher in ninth grade lend it to me when I was 15... It was rather unusual and a bit difficult at first but I was already into depeche mode and and other electronic bands so after repeated listening I was hooked. I guess the best records are the mid 70's ones with the trio Edgar Froese, Peter Bauman and Christopher Franke. Go for records like Ricochet, Rubycon, Phaedra and Encore... they are all pretty good with a distinct electronic sound. Of the early, experimental, drony stuff I really love Atem and Zeit - perhaps their best record alltogether...
The eighties stuff is way to cheezy for my taste... except for one exceptional livealbum: Poland. It's absolutely AWESOME and it doesn't sound as terribly dated as many of the TD records from that time. If you see it just buy it!!!! Hmmmm, I think I'm going to locate my copy of Zeit now and have a listen....
And yes, another thing: I would stay clear of those Tangerine Dream compilations. It's really no way to be introduced to a band like TD... No, stick to original albums!

TD is great.. I like the cheesy 80's soundtracks and stuff like Flashpoint, Legend and especially Firestarter. If the cheesiness of their mid-later years doesn't bother you, I know I've always loved Optical Race, but that's already too new-agey for most purists. If you want more innovative stuff go for the mid-70's recordings or even those old droney ambient gems.
I must second Co-existence though with his suggestion of Poland.. it's a fantastic record.

Klaus Shulze: Timewind, from 1975, is also awesome! It's a lush solo album from one of the founding members of Tangerine Dream. Pulsating, hypnotic rythm with phat, melodic synth on top. Froese's soloalbum Epsilon in Malaysian Pale is also recommendable, but beware; there is a remastered reissue of it out there that I hear is utter crap because of some very bad and unnecessary postproduction, so try to find the original...

Ricochet, Zeit, and the live album, Poland, are my favorites. Their early stuff is very ahead if its time, and I enjoy it a lot more than a lot of newer ambient stuff. Very dark and atmospheric.
