Natronkake
(this one's a bit hard to translate, but it's awesome, so
I'll try)
1 egg
2 cups of sugar
1 liter of.. sour milk.. I don't know what it's called in
english, but it's kind of thick and acidic-tasting (sour)
milk.
1 tea spoon of.. we call it"natron" (natriumcarbonate)
3 tea spoons of "hjortetakksalt" (Ammoniumcarbonate
apparently).
1,2 liters of flour (+ some more for later)

syrup.

mix the egg and sugar, mix some of the flour with
the natron and hjortetakksalt, and mix it in with the egg
and sugar (this is just to make sure that the natron and
hjortetakksalt is evenly distributed). Then add the rest of
the flour gradually until you have something that is RIGHT
on the border of becoming dough.. it's supposed to be so
that you can still use a whisk but it's supposed to be
really thick and heavy to stir.

now, put some more flour on a plate.. use a spoon and pick
up some of the dough.. put it in the flour and cover it with
flour. you should be able to use your hands when it's all
covered in flour and mold it into a flate cake-ish thing.
Put it on a dry frying pan and.. well.. fry until
it's golden-ish on the outside. To make sure it's "done" all
the way through, use your hand and see if you can "wiggle"
it.. if it doesn't wiggle, it's done. Eat with lots of syrup
on.


caramels
3 dl cream
3 dl syrup
3 dl sugar
1 tablespoon of butter

three first things go into a pot. bring to boil and boil
slowly for.. about 1-2 hours or so.. when you can pick it up
with a spoon and drop it in a bit of water, and it gets a
caramel-ish substance, it's done. if you have the heat on
too hot, you'll get.. "knekk." don't know how to translate,
but it's something else.

add the butter when it's done. pour it all onto a large
plate and wait 'till it cools. all done.

i'm going to make brownies anyday now.

on a sweet tangent, i recently had something that was called
sponge candy, it was sugar that it cooked until it starts to
caramelize, then it's puffed up with air and freezes into a
spongelike crisp. then it's dipped in chocolate. do
yourself a favor and score some sponge candy.

i'm not too crazy about cake in general, except for
pancakes. although the wife did make a killer
carrot/pineapple/coconut cake a week ago. does anybody
actually read this stuff?

before... it's the same as "brødkake," right?

i dunno either, i just asked the guy at the candy shop what
it was, and that's how he explained it, and then i ate it as
i drove along the shore of lake superior. it was crisp and
glassy, now i've got something to request for christmas. to
plaidzebra, from santa.

incidentally, where i live is full of people of norwegian
descent , because the climate up north is similar to norway,
and it's rocky and woodsy. more mosquitos, though.

not too long ago i got a piece of pie at the norske nook.
worst pie i've had in ages, btw.

I haven't got the recipes available atm, sorry. But I found
them in a basic cookbook, so they're not that special, just
simple and tasty.

Actually the Krydderkake is mostly known as Surmelkskake on
Jæren, where I'm from. I haven't heard about Brødkake, so
I cannot confirm the similarities

ah.. ok..

it's a dark-brown cake that quite often has "glasur" on the
top if it is the same... I think I've heard brødkake
referred to as krydderkake, but.. yeah.. some people call
"svele" "natronkake," and it definately isn't the same
thing...

hahaha! yeah... it's probably because I want to re-create
all the good stuff my grandmother made for me when I was
little... I defeinately want to grow up and be in one of
those grandparent couples that always have something good
for our grandkids and lots of secret recipes that we only
pass on to them when we die.

definately!

it'd be a shame if we all grew up to be grandparents that
served microwave dinners, smoked weed and listened to scary
aphex twin music while our grandchildren were there.
