It all comes down to the dressing. There was this blueberry
dressing that was superior to all other dressings i found. I
dont even like blueberrys! :p

well, i try to make lotsa different kinds. i just made a
tabouli salad.

i usually buy the more exotic veggies.. like eggplant,
yellow peppers, parsley, radishes.. etc. im not a big fan of
generic vegetables like ice burg lettuce. haha

as far as dressings.. usually just balsamic vinagar and
olive oil.. and spices. like fresh basil, cilantro.. etc.

i liek fruit salad too. with crazy fruits.. liek star fruit
and stuff.

and i like incorporating nuts and seeds.. like walnuts,
almonds, sesame, pumpkin' seeds.

but i need new ideas.

oh avocado and walnuts salad is good!

the secrets in the dressing.. get that wrong and you're
fucked.

olive oil, mixed herbs, white vinegar, english mustard and
garlic and black pepper. Get the proportions right and
you'll impress.

i like dijon mustard too! but it has to be grey pupon, so i
can chuckle to myself about having any grey pupon. As for
salads, I usually put salad in my salads, but in general I
hate salads cause they always get watery and the water mixes
with the dressing and makes me want to vomit.

I can give you my recipe for hummus, which is effectively a
kind of salad. In a way. And it's fucking amazing.

i love hummus.

whats the recipe?

offline manicminer from Paris (France) on 2005-05-24 14:19 [#01611104]
Points: 1423 Status: Lurker

ok, this is my own recipe - sort of an amalgamation of other
recipes, and it's taken me a lot of experimentation to
perfect it. personally, i think it's perfect. i make it
about once a week. it makes a big vat of the stuff, but me
and my girlfriend love hummus so much is only usually lasts
a few days. here we go:

INGREDIENTS:
500g dried chickpeas (dried, not canned)

Sesame oil - 1.3 of a mug of it (it looks a bit like olive
oil, but it's darker and stinks of sesame seeds. Should be
able to get it in most places)

The juice of 3 lemons

8 large, raw cloves of garlic

Olive oil - about 2 mugs of it

1/2 mug of water

About 1/3 mug of sesame seeds

1 teaspoon salt

2 teaspoons ground black pepper

4 teaspoons ground paprika

offline manicminer from Paris (France) on 2005-05-24 14:23 [#01611110]
Points: 1423 Status: Lurker

First of all, soak the chickpeas in water overnight. Then
stick them in a large pan of lightly salted water, bring it
to the boil, turn the heat down and let is simmer over a
reasonably high heat for about an hour and a half. You'll
need to keep checking it to make sure the water hasn't all
evaporated, otherwise the peas will burn.

When they've boiled, they should be fairly soft. Soft enough
to eat, anyway. They'll still have a certain firmness. If
you're going to mash them by hand, you'll probably need to
boil them for longer and make them softer, but it doesn't
really matter if you have a blender.

In a large bowl, stick the garlic, lemon juice, sesame oil,
salt, pepper, paprika, olive oil, water and sesame seeds.
Blend them together using a hand blender or food processor
until you have a paste. It should be a kind of "grey"
colour, like tahini. The more "pasted" the sesame seeds are,
the better.

Now stick the chickpeas in. Maybe a quarter of the chickpeas
at a time. But leave a few chickpeas unblended. Blend it all
together. At the end, you should have hummus. If it's too
dry, add more water. Blend it for as long as you want - if
you want it totally smooth, that's fine, but I like it to
have a few chunky bits in. Stick the unblended peas in for a
bit of texture

That's yer hummus. Loads of it. Really nice, and really good
for the health. Keep it in the fridge. I've kept it in the
fridge for up to a week before, but I've no idea how long it
will last, I've always eaten mine quite fast.
