Bamboo Shoot and Mushroom Egg Drop Soup Recipe
I'm a big fan of easy meals. This bamboo shoot and mushroom egg drop soup can be made with canned items and a single egg - and done in 15 minutes. It has a great, rich flavor too!
Ingredients: 2 cans chicken broth (~4 cups) 4oz can bamboo shoots, drained 6oz can button mushrooms, drained 2 Tbsp sherry 1 tsp soy sauce 1 tsp wine vinegar dash salt dash pepper 1 egg
Mix all ingredients but the egg in a saucepan and bring to a boil. Simmer for 15 minutes. Crack the egg into a small bowl, discarding the shell. Stir the egg briefly with a fork. Slowly pour the stirred egg into the soup, stirring gently to distribute. Serve immediately.

it sure doens't look bad... I wouldn't prepare it myself, as i am a BAD chef. But if i ever have the opportunity to taste it. i sure will... :D Sounds interesting.
I had never heard about it before. Pretty original dish. :D

NO! ----------------------------------------- Fresh Bamboo Shoot Soup:
As the thin showers of summer turn into the heavy downpour of the monsoon weather, shoots suddenly catch the eye in the bamboo groves. They touch you with joy for you know that fresh bamboo shoots are once again in season.
2 lb fresh shoot of big bamboo (Waboe) 1 cup split chick pea 1½ lb shrimps 11/3 cup garlic crushed 7 pods okra 5 pieces danyin-wek (Pithecellobium lobatum) ½ cup tender leaves soo-bok (Acacia intsia) 1½ tsp shrimp paste 1 tsp sugar 1 tsp salt 15 cups water
Start the procedure 3 hours ahead. Take the bamboo shoots, cut them in half for easier handling, peel the bark, and use a sharp knife to slice thin layers to create strips. Soak in water for 3 hours. Soak the chick peas separetely for 3 hours.
After 3 hours, take a large pot with 15 cups water. Dissolve shrimp paste and salt in the water. Sieve bamboo strips and boil. After boiling for 30', add chick peas. Boil for another 15' and then add shrimps. Cook for another 20'. Add danyin-wek, boil. After 20' the danyin-wek will become tender. Add okra. After 5', taste for sugar and salt. Add soo-bok leaves and take off from fire. Add some water if too much has evaporated.
Danyin-wek and soo-bok are the ingredients which add zest to the soup but may be considered optional if odour is too strong

If you do not like soup try the following:
Recipe: Chicken in Red Curry with Bamboo Shoots
Preparation Time: 15-20 minutes Approximate Cooking Time: 20 minutes Serves: 4
Ingredients For Chicken in Red Curry with Bamboo Shoots 400 grams of diced, boneless chicken 1 tablespoon of red curry paste 2 cups of coconut milk 300 grams of bamboo shoots (sliced lengthwise) 5 kaffir lime leaves, halved 1 fresh red chilli (sliced lengthwise into 8 pieces) 1/2 cups of sweet basil leaves (Bai Ho Ra Pha) 3 tablespoons of fish sauce 1 1/2 teaspoons of sugar
Step by Step Cooking Instructions: 1. Boil one cup of the coconut milk, stirring constantly. Put in the red curry paste and chicken, stir well, and cook until the chicken is done.
2. Add the remaining coconut milk, bamboo shoots, sugar and fish sauce, then slowly bring to a boil.
3. Add kaffir lime leaves, and chilli, and remove from heat. Garnish with sweet basil.
