Tofu French Toast

Simple to make and so healthy: you won’t miss the eggs and
milk in this tender, cinnamon-spiced, high-protein breakfast
delight.

INGREDIENTS

8 slices vegan French bread (a couple of days old is best)
1 cup whole wheat flour
2 cups soy or rice milk
4 tablespoons tofu
2 teaspoons cinnamon
1 teaspoon vanilla
2 tablespoons vegetable shortening

1. In a blender, blend all ingredients except the shortening
and bread. Transfer the mixture to a bowl and dip the bread
in, covering both sides.

2. Melt the shortening in a pan and place dipped bread in
pan. Add extra cinnamon on top.

3. Brown on both sides. Serve topped with fresh fruit or
maple syrup.

Serves 2.


Helpful Hints:

Recipe may be doubled.

there is some kind of soup with garbanzo chick bean peas and
tomatoes and spices and stuff with toast, pimento and
parmesan that is really good. don't have the recipe here
though.

also in a region of france they make toast with morilles (a
kind of mushroom) in a sauce including cream and stuff.

apparently, for the morille sauce, you have to first melt
some butter in a pan, add the morilles, let them brown a few
minutes, take them out, then put cream (butter AND cream?!
doesn't sound too dietetic...) into it and let it thicken
then put back the morilles and mix and put it on toast.

or according to another recipe, you have to make dried
morilles soft by putting them into water for 2-3 hours, then
in a pan put some shallots and butter in a pan, brown (?)
them, put the morilles into the pan, let cook while stirring
from time to time on mild fire, salt & pepper, then spill
the cream on the preparation, let cook until it boils and
put it on the toast.
there might be even another recipe.
i heard some put white wine in it (i don't like white wine
in recipes that much).

scramble 1 egg, chop into little bits with laddle
bake 1 hashbrown patty, chop it up into little bits with
what ever you please
cook 2 breakfast sausages, chop them up too

put it all into a bowl, squirt some ketchup in, put it on
toast

Breakfast Sandwich!

you could also leave everything whole and try to make a
sandwich but i found thats actually messier

use a regular sized drinking glass to press & cut a hole out
of a normal piece of bread.

put bread into frying pan. (med-high)

crack one egg into the hole of the bread.

fry the egg & toast to your liking, flipping once.

you will then have a fried egg inside of a piece of toast.
