thats filet wellington, you can pretty much see how it's done: take the filet (beef, dunno the right word, it's the most expensive part), prepare duxelles (sauce made of champions), season meat, fry it roughly, put duxelle on meat, wrap in this thing i have no idea how it's called in english (picture1), oven 220°C, 40 minutes. it has to have 63°C in the core, then it's still pink and juice. potatoes and a madeira sauce as well as some bottles of a fine red wine go well with it |
