Ghost in the shell (manga, not the film) by Masamune Shirow.
Pretty much anythything designed by Yoshitaka Amano, Battle
Angel Alita (Yukito Kishiro) and of course the Evangelion's
from Evangelion.

The Guyver cartoons were always good. I've been meaning to
