Hey guys. I wrote about my meal a few days ago, how I was
going to prepare a 7 course meal for my wife's family of 25.
So... it went quite well (it was last night). All in all,
I was pleased with the food I made, the family was pleased
and also they were quite happy to see what I could do after
graduating from cooking school. There are a few things that
could have been done better, and a few things that were done
great, but like I said, all in all, it was good.

1. Grilled zucchini and red pepper with olives, parmagiano
regiano shaving and a olive oil-balsamic vinegrette.
2. salmon tartare with nori and taro julienne, lemon
yogourt sauce.
3. saffron risotto with foie gras and porto sauce.
4. cream of corn soup with BLANCHE DE CHAMBLY beer and wild
rice.
5. filet mignon of beef with potato purée, roasted carrots
and brussel sprouts, red wine sauce.
6. three cheeses: Victor et Berthold, Bleu Ermite, and Le
Cru des Érables, with roasted nuts, and apples.
7. Mango ice cream with a crispy cookie and
strawberry-cherry-grape fruit salad poached in a red wine
(Corbières, Skalli, 1999) syrup.

All was homemade, except for the cheese, obviously. but i
made all the sauces and ice cream, cookie, etc.

I was pleased.

congratulations..... nothing makes a better impression than
excellent food

now, whenever they think of you, they will unconciously
associate you with good taste... which is good for yoU!

im not even sure what that is!

it sounds great..but im a bit upset that a 'mignon' of beef
is your only meat...meat need good for smart making

only meat? foie gras is a meat. salmon is a meat... well,
it's a fish, but it's a fish meat... so there.
