Hey, I was at a restaurant the other night and I had a bowl of caribou chili, which got me to thinking how I would like to be able to make my own chili at home. But i ain't got a recipe for it, so if anyone could give me a good chili con carne recipe, I'd much appreciate it. thanks. joey

One medium chopped onion 3 to 5 cloves of minced garlic One pound beef Two 16 oz. cans Tomato sauce one 8 oz. can of corn 3 or more tbs. chilli powder. 2 tbs. ground cummin chopped fresh parsley to taste - whatever you like oregano - whatever you like 1 or 2 bay leaves Ground cayanne pepper or* minced fresh jalapeno peppern to taste.
Juice of one lime 2 tsp. sugar. black pepper - whatever you like. ....oh yes whatever beans you can get hold of
I don't tend to follow a specific recipe - it changes depending whats in the cupboard.

yeah, recipes do tend to change according to what is available. Like James Barber, the urban peasant says, "food is like sex, you gotta use what you got." It is just makes sense that you cannot use what is not available to you. I have been doing a little research on chili, and i am getting the general idea of what is in it, and taking whatever is most common from all the recipes. so far, the most common ingredients have proven to be
beef onion garlic can tomatoes cumin chili powder, naturally salt pepper, naturally beans.
i just have a hard time getting it to the right consistency. i'd like it to be really thick and chunky. perhaps i come to this stage by reducing (simmering) for along time, to evaporate the water in the tomatoes? hmmm....
