Okay people I'm sure it's just me being stupid, but I need some help with MIDI. I just don't get it, it doesn't help that no-one has shown me, I have a MIDI keyboard, MIDI cables and FruityLoops3, now what?

Do you have a MIDI-interface and a (good) soundcard? I have not used FL3, so i don't know how things work with it exactly. You should find some FAQs through some search-engineering, i'm sure. Just bust your head with it, eventually you'll get it right.

First, I don't know fruityloops, but that shouldn't matter. Unless, floops doesn't support MIDI. This info isn't software specific.
Remember, MIDI does NOT carry any audio signals. It's just a remote control protocol. You play your keyboard, floops or whatever softsynth, makes the sound and it comes out of your soundcard.
One set of MIDI in/out ports support 16 channels. You have to select a channel on your keyboard and one in the software. It has to be the same channel. Then you can play the instrument on that channel. Most multitrack software automatically change the channel as you click/select tracks.
Remember, when you save a MIDI-file, it only contains MIDI information. No audiofile edits or anything like that. Well, the small filesize should indicate that anyway. Any samples or audiorecordings, you'll have to save too.
Most software save things as projects or whatever, where both MIDI and audio belonging to a project is saved together.
